Bread issue: Govt set to ban pottassium bromate


New Delhi, May 24, 2016, (PTI): The government is set to ban potassium bromate as food additive with Health Minister J P Nadda asserting that it will take appropriate action following a report which claimed presence of cancer-causing chemicals in bread samples of virtually all top brands.

A Centre for Science and Environment (CSE) study had found nearly 84 per cent of 38 commonly available brands of pre-packaged breads including pav and buns, testing positive for potassium bromate and potassium iodate, banned in many countries as they are listed as "hazardous" for public health.

It claimed that while one of the chemicals is a category 2B carcinogen (possibly carcinogenic to humans), the other could trigger thyroid disorders but India has not banned their use.

Nadda said he has directed the Food Safety and Standards Authority of India (FSSAI) to take the matter seriously and submit a report at the earliest. "I have told FSSAI to take the matter seriously and submit the report. They are coming out with a report. The Ministry will take appropriate action accordingly. We will take action as soon as the report comes," Nadda told reporters.

"Potassium bromate is one of 11,000 food additives that are allowed in food business. After careful consideration, the Food Safety Standards Authority of India (FSSAI) has decided to remove potassium bromate from the list of permissible additives," FSSAI CEO Pawan Kumar Agarwal said.

The regulator has recommended removal of potassium bromate from the list of permissible food additives to the Health Ministry. On the notification, Agarwal said, "As far as issue of notification is concerned the FSSAI has already sent the recommendation to Ministry of Health and it would be issued by the Ministry and there it may take a week or two."

After the removal of potassium bromate from the list its use as food additive would be banned, he said. On use of potassium iodate, FSSAI is examining the evidence and soon a decision will be taken over the same.

CSE also welcomed steps initated by the country's food regulator to ban potassium bromate used as a food additive and said public health must remain a "priority". According to CSE, potassium bromate typically increases dough strength, leads to higher rising and uniform finish to baked products, while potassium iodate is a flour treatment agent.

"We welcome the steps initiated by FSSAI to ban potassium bromate and evaluate the use of potassium iodate – we hope a ban on potassium iodate will follow.

"The Authority’s quick response to what we found in our study reestablishes our stand that public health must remain a priority," said Chandra Bhushan, deputy director general, CSE said.

    Potassium bromate adds more fluffiness to bread. So the seller can make two loaves instead of one - using the same amount of flour!

    According to a report "Scientists with the Council of Scientific and Industrial Research laboratory in Thiruvananthapuram had three years ago pointed out that potassium bromate could be replaced with an alternative called glucose oxidase".

    Glucose oxidase could be already in use in those countries where potassium bromate has been banned.

    I won't be surprised if some enterprising businessman is already setting up a few factories to manufacture glucose oxidase.

    Beef banned in Maharashtra, around 5 Lakh people became jobless. If they ban the bread, all Vada paav, Bread omlette shop keepers will lose their job across the country. Since many decades people are eating the bread and no problem but how come now it causing for cancer??? Ache din under Modi ruling. Instead of getting the jobs, people are losing.....

    It is a fact that something that bakers used did make their bread fluffy/spongy, brighter and lasting. I have been baking for home use since five years and all my trials on different methods/ingredients failed to give me a bread of the texture that we get in bakeries. But you bet, the taste of home made bread is way much better than the bakery supplied and my kids relish it.

    We are happy with whatever texture my bread gives us, will never complain any more. Because we now know the culprit and are happy that we have avoided it to some extent.

    Instead of kneading in the evening and allowing to rise during night, try to keep the dough to rise during the day. The warmer temperature, yeast works fast and you get a spongier bread (compared to the one risen at night).

    No Shankar, no kneading in the evenings, I do it in the mornings. After four years of manual slog, my gem has gifted me this year with an electric kneader. However, if the batter is a bit dry the rolls don't rise enough, if its a bit soggy they collapse..

    Nevertheless, every attempt is a learning opportunity. Gradually they do improve and they have for me.

    Here the question is not about closing bakeries and creating unemployment. More importantly it’s about using harmful ingredients in our daily bread, which can have negative effects on people’s health. The present govt. must immediately ban potassium bromate and iodate which the previous govt. didn’t do and which are banned in many countries.

    Why is the govt., "set" to ban? It should ban. Why have an ineffective "Food and Civil Supplies department" which is promoting spurious milk made of chemicals adulterated bread, flour, etc etc. Appears this is the Aache Din promised by a man with a 57" chest, full of hollow promises.
