Recipes - Parsley Cake

Ingredients:

1 cup parsley

1 cup chopped carrot

2 cups plain flour

1 cup sugar

1 cup oil

2 eggs

½ tsp. baking powder

 

Method:

Sieve flour and baking powder. Grind chopped parsley and carrot along with oil. Beat eggs and add sugar, mix thoroughly. Add the parsley carrot mixture to the beaten eggs. Mix well. Add the flour and mix gently.  Pour this mixture into a greased baking tray.   Pre heat the over for 10 minutes and  bake the cake for about 45 to 60 minutes on low heat.

 

Editors Note: Parsley can be replaced with coriander leaves.

    Thank you for the Parsley Cake recipe it was a good change from other cakes, tried it and came out very delicious, recommend readers to try it, I would prefer to reduce the sugar little also I beat the egg white stiff and folded if into the batter last.
