Recipes - Puliyogare
Ingredients:
1 cup sona masuri rice
2 tbsp. chana dal
2 tbsp. moong dal
½ tsp. urad dal
2 tbsp. black sesame seeds
8 pepper corns
2 short red chillies
1 small ball of tamarind
2 tbsp. jaggery
½ tsp. cumin
Small piece of turmeric
1/8 tsp. fenugreek
1/8 tsp. mustard
¼ tsp. turmeric powder
Few curry leaves
1 tsp. oil
Salt as per taste
For the seasoning:
4 tbsp. sesame oil or coconut oil
½ tsp. urad dal
½ tsp chana dal
2 tbsp. pea nuts
2 sprig curry leaves
½ tsp. mustard
2 long red chillies
1 tsp. black sesame seeds
Method:
Cook rice in 2 ¼ cup of water adding salt and little oil. Set aside.
Dry roast chana dal, moong dal, urad dal, black sesame seeds,pepper corns, cumin ,fenugreek and curry leaves . Heat one tsp. oil and roast chillies. Once cooled , powder all the roasted ingredients along with turmeric .
Soak tamarind and jaggery in water.
Heat a pan with oil. Roast pea nuts and set aside. In the same pan splutter mustard. Add chana dal, urad dal and broken long red chillies. Sauté for a minute. Add curry leaves and sesame seeds. Add the roasted pea nuts. Add tamarind and jaggery water. Add powdered spice mixture gradually and stir well. Lastly add cooked rice and mix gently. Serve warm with any pickle of your choice.
