Recipes - Palak Paneer

Ingredients:
2 bunches of Palak (Spinach)
½ bunch of Methi Leaves (Fenugreek Leaves)
200 gms Paneer cubes
1 tsp. red chilly powder
3 green chillies
1" piece ginger
8 flakes garlic
Salt to taste

Method: 
Clean and cut the palak and methi leaves.  Grind the ginger and garlic into a paste.  Heat  little oil in a pan.  Add the ginger garlic paste, chilly powder and whole green chillies.  Fry for about two minutes on a slow fire.  Add the spinach and methi leaves.  Saute and cook till done.  Remove from fire and set aside to cool. In the meantime, fry the paneer cubes in a little ghee till light brown on all sides.  Remove and keep aside.  Puree the palak methi mixture in a blender when cool.  Return the mixture to the pan and boil.  Add salt to taste.  Stir well.  Now add the paneer pieces and cook on a slow fire for 5 minutes.

PS : You can avoid frying the paneer if you are health conscious.  But fried paneer tastes better.
