Recipes - Sweet Rice Pancakes

Ingredients:
2 cups rice
150 gms. jaggery
1/4 cup curds
1/2 tsp. turmeric powder
1/4 cup beaten rice
1/4 tsp. cumin seeds
1/4 tsp. methi seeds
Salt as per taste
Method:
Clean, wash and soak rice with cumin and methi seeds for 5 to 6 hours. Wash the beaten rice and drain all the water. Grind the soaked rice ,cumin, methi seeds adding curds, beaten rice and little water into a fine paste. Keep this batter overnight. Soak jaggery in water overnight. Next day morning mix the softened jaggery and salt into the pancake mixture. Mix well. The consistency should be a little thicker than the normal dosa mixture. Heat a pan, grease it with oil /ghee and fry pancakes. Fry both sides.
