Recipes - Tava Bhindi (Ladies Finger)

Ingredients:

15 Medium sized ladies finger

1 tbsp. coriander powder
1 tbsp. jeera powder
1 tbsp. garam masala powder
1 tbsp. amchur powder
½ tbsp. fennel seed powder
2 tbsp.ghee or oil
Salt as per taste.

Method:

Wash, pat dry the bhindis and slit them lengthwise leaving the stem end intact. Do not slit them completely. Mix all the dry powders with salt and stuff the bhindis  one by one  with the dry masala and set aside.

Heat a non stick pan with 2 tbsp.  oil or ghee and place the bhindis carefully. Cover the pan and cook on slow flame. Turn the bhindis and repeat the same till tender & soft.

Serve hot with rice or chapathis.

    Amchur powder is dry mango powder which is available in any grocery store.
    Fennel powder is Badishep (looks like jeera) powder.
