Recipes - King Fish (Surmai) Masala

Ingredients:

½ Kg. king fish
4 big onions
½ ” ginger
2 flakes garlic
3 green chillies
3 tomatoes 
½ tsp.red chilli powder
1 tsp. coriander powder
1 tsp. pepper powder
5 grains of fenugreek
½ tsp. garam masala powder
½ tsp.turmeric powder
2 sprigs curry leaves
2 tbsp. chopped coriander leaves
Cherry sized ball of tamarind
Salt to taste
Oil as required

Method:

Marinate the fish with a pinch of salt, turmeric powder and chilli powder for 15 minutes.  Later shallow fry the fish slightly on both the sides in a pan with very little oil and set aside.

Heat 1 tbsp. of oil in a non stick pan and add 1 sliced onion, ginger, garlic and green chillies and sauté till they turn brown. Remove this and set aside.

In the same pan  add red chilly powder, coriander powder, pepper powder, fenugreek, garam masala and turmeric powder and fry on slow flame till good aroma comes. Later, grind both the sauted mixtures  together into a smooth paste.

Heat 1 –2 tbsp. of oil  in a pan, add curry leaves and 3 sliced onions and sauté till they turn brown. Add the ground masala and mix well for a minute. Add finely chopped tomatoes and salt to taste and mix till everything becomes a paste. Add the tamarind pulp and fish. Cover the pan and let it simmer for 5- 10 minutes.

Serve hot , garnished with coriander leaves.
