Recipes - Pepper Garlic Pork
Ingredients:
1 Kg. Pork
½ tsp. turmeric
5 medium onions (diced)
2 large pods garlic (sliced)
1 ½ ”ginger ( minced)
2-3 green chillies(slit)
2-3 bay leaves
Vinegar as per taste
Salt as per taste
2 tbsp. chopped coriander leaves
To be powdered :
2-3 small sticks of cinnamon
5 cloves
1 tbsp. pepper
1 tbsp. cumin (dry roasted)
½ tbsp. mustard (slightly dry roasted)
(Powder these ingredients together and set aside)
Method:
Clean, cut, wash and drain the pork. Marinate it in little vinegar, salt and turmeric powder for about an hour. Transfer this to a heavy bottomed vessel and keep covered on medium flame, stirring in between. When fat oozes out add onion, garlic, ginger, green chilles and bay leaves. When onion is slightly soft add the dry powdered masala and mix well. Adjust salt & vinegar. Cook until meat is soft. Garnish with chopped coriander leaves.
