Recipes - Sweet Idly


Ingredients:

3 cups pour boiled rice/ idly rice
1 ½ cup beaten rice
2 cups butter milk ( not sour)
2 cups milk
½ tsp. turmeric powder
¾ cup grated jaggery
1 cup grated coconut
½ cup mixed nuts ( chopped)
2 tbsp. ghee
1 tsp. salt or as per taste
5-6 cardamoms powdered.
½ tsp. baking soda (soda bicarbonate)

Method:

Wash rice thoroughly. Soak rice along with beaten rice adding buttermilk, milk and turmeric powder for about 2 to 3 hours. The rice mixture should be covered with enough liquid. If not add some water. 

Grind coconut coarsely. To this add jaggery and run the blender once. Add soaked rice mixture and just grind it coarsely. Remove and add baking soda, cardamom powder and salt. Mix well. The batter consistency should be medium thick. Allow the batter  to ferment overnight or for about 6-8 hours.  Later steam them in the idly moulds for about 10-15 mts. Insert a toothpick to check if they are done. 

Serve hot with tea of coffee.
