Recipes - Hyderabadi Chicken

Ingredients:
½ kg. chicken
1 medium onion
1 medium tomato
2 tbsp. coriander powder
1 tsp. cumin/ jeera powder
1 tsp. chilli powder
½ tsp. turmeric powder
½ tsp. pepper powder
1 tsp. garam masala powder
2 sprigs curry leaves
10 -12 cashew nuts
1 tbsp. oil
1 tbsp. ghee
Salt as per taste

Method:
Clean, wash and cut chicken into medium pieces. Soak cashew nuts in water for 15 minutes and grind into a paste. Slice the onion and tomato.

Heat a heavy bottomed pan with oil.  Brown the sliced onion. Add tomato and fry until soft. Add coriander powder,  cumin powder and chilly powder.  Add chicken, turmeric powder, pepper and salt.  Mix well.  Keep covered on medium flame.  Add some water if required.  Cook until chicken is soft and tender. Lastly add cashew nut paste and give a gentle boil.  Remove from fire.  On the top, spread curry leaves, garam masala powder and ghee.  Keep covered.
