Recipes - Pea Nut Holige

Ingredients:

¾ cup wheat flour
2 tbsp. maida
½ cup water
Pinch of Salt 
Oil / ghee

For Stuffing:

¾ cup pea nuts
2 tbsp. white til
¾ cup powdered jaggery
¼ tsp. cardamom powder (optional)
¼ tsp. nutmeg powder (optional)

Method:

Knead wheat flour with water adding salt into a smooth dough.

Roast pea nuts until crispy and set aside to cool.. Roast til and set aside to cool.  Later powder them in a blender coarsely. Now add jaggery powder and blend once. Add nutmeg and cardamom powder to the peanut mixture and make lime sized balls of this mixture.  

Make lime sized balls from the dough and roll into small pooris.  Place the peanut ball inside the poori and fold it back and roll again, dipping into the dry flour. 

Heat a non stick pan and fry the holliges, both sides until slightly golden brown in colour. Sprinkle some ghee.

Serve hot with some ghee.
