Recipes - Avial

Ingredients:

1 Raw Banana
1 cup yam
1 drumstick
1 cup carrot
½ cup gerkins
½ tsp. turmeric powder
1 cup grated coconut
3-4 green chillies
½ tsp cumin/jeera
3 tbsp. of curds
1 sprig curry leaves
2 tbsp. coconut oil
Salt as per taste

Method:

Wash and cut vegetables into 1 ½ “pieces lengthwise.   Add 1 tbsp. of  oil in a pan and sauté the veggies for about  3-4 minutes.  Then  cook them adding  ½ to one cup of water  along with turmeric and salt.

Grind coconut along with green chillies and jeera.  Add this paste to cooked vegetables and cook until done. Lastly add beaten curd.  Sprinkle curry leaves and pour coconut oil on the top. Cover and set it aside.

Serve hot with steamed rice.
