Recipes - Coriander Rice

Ingredients:
1 cup rice (cooked)
1 cup coriander leaves (chopped)
¼ cup mint leaves
½ tsp. cumin
¼ tsp. pepper
2-3 green chillies
1 cup grated coconut
½ cup shallots
2 tbsp. pea nuts
1 large onion (sliced)
1 tsp. garam masala powder
2-3 tbsp. oil or ghee
2-3 tbsp. lime juice
Salt as per taste
To Garnish:
Few paneer cubes (shallow fried)
1 small onion (sliced and browned)
Few coriander leaves
Method:
Grind coriander leaves, mint leaves, jeera, pepper, green chillies, shallots and coconut into a fine paste.
Heat oil or ghee in a pan and sauté sliced onion till light pink. Add pea nuts and sauté until crunchy. Add the masala paste and fry until dry aroma fades. Add salt as per taste. Then add rice and toss gently. Sprinkle garam masala powder and lime juice.
Garnish with browned onion / paneer and coriander leaves.
Serve with any gravy/ raitha/ pickle or chutney of your choice
