Recipes - Moroccon Harira Soup


100 gms. finely diced beef
1 cup boiled chic peas
2 tbsp tomato paste
1 small bunch fresh parsley
1 small bunch fresh coriander
1 liter chicken stock
1 medium onion chopped
1 tbsp. chopped garlic
2 eggs beaten
1 tspn. butter
Salt to taste


Marinate beef with salt and keep aside. In a heavy bottom pan, heat 1 tspn butter and saute the beef. Add chopped onion, garlic and tomato paste and stir continuously for 2 minutes. Add chic peas, parsley, coriander and chicken stock and boil for 5 minutes. When the soup is boiling, add the beaten egg. Check for seasoning and add salt accordingly if required. Serve hot with a wedge of lemon.
